Traditional All-Purpose Chilli/Curry Paste Recipes | 传统万能辣椒咖喱酱料


Red chilli paste is a homemade chilli paste made with red chilli and blended to a fine paste. if you are cooking curry, you may add in lemongrass when you cook.Suitable for cooking with all sorts of ingredients such as seafood, meat, vegetable, etc. Or used for sambal fried rice, mee goreng, etc. Very versatile paste.



== INGREDIENTS ==

Dried Chilli 80-100g

Small Onion 60g

Belacan(Shrimp paste) 25g

Galangal 13g

Turmeric 3g

Oil 150ml

Lemongrass 2 pcs



== STEPS ==

1. Pour water into the pot

2.Put all chillies into the water

3.Boil the dried chillies until soft

4.Turn off heat and leave the chillies until cool

5. Peel off all the skin of the ingredients.

6.Take out the seeds of the chilli

7.Grind it

8.Finally, complete grinding

9.Turn on low medium heat

10.Frying chilli paste requires more oil to bring out fragrance

11.Oil cannot be too hot, you may add in even when oil is not warm yet to reduce risk of burning chillies

12.Cook slowly. Stirring now and then

13.Add more oil if you do not see any oil. Chilli paste tend to absorb oil

14.As the chillies about to be done, the oil will seperate from the chillies

15.Once cooked, the chillies will be darker in red

16.It can be refrigerated up to 3 months

17.Can use it for curry chicken, spicy shrimp chilli, vegetables fish or meat

这是个多用途的辣椒酱。大多是用来和其他食材煮。 适合海鲜,肉类,菜,炒饭, 炒面,等等。 爱吃辣就该试试。不适合生吃的。 因为费时, 建议做多点冷冻起来慢慢用。



==材料==

辣椒干 80-100克

小红葱 60克

峇拉煎 25克

高良姜 13克

黄姜 3克

食用油 150毫升

香茅 2个



==步骤==

1.把水倒进锅里

2.把辣椒倒入锅里

3.把辣椒煮至软

4.把火关掉,辣椒放至冷

5.把全部材料去皮

6.把辣椒里的种子去掉

7.开始搅拌

8.终于搅拌完了

9.开中小火

10.炒辣椒酱需要用多一点油才会香

11.辣椒酱可以在油还没热时候就加入,不然容易烧焦

12.用小火慢慢煮,时不时搅一搅

13.如果看不见油了,就要加油。辣椒会吸油

14.当煮好时候,油和辣椒会分离

15.煮好后,颜色会比较暗

16.冷藏(1-3个月)

17.适合咖喱鸡,虾米酱,菜,鱼,肉等等
