Don’t be fooled by the clear broth and what seem to be plebeian ingredients, because this dish will shock your palette with its tangy, savory and spicy flavors. A truly simple dish to make, simply pile the ingredients onto the pomfret, pour the sauce and steam! This method allows you to taste the naturally fresh sweetness of the pomfret when it’s cooked, which is something fish lovers will enjoy!



== INGREDIENTS ==

Pomfret Fish

Ginger Few Slices

Spring Onion

Dried Mushroom

Salted Vegetable 150g

Tomato

Salted Plum 2 pcs

Rice Wine 1 tbsp

Soy Sauce 1 tbsp

Coriander Chilli


== STEPS ==

1. Soak dried mushroom for 30 mins

2. Remove mushroom’s stem and cut into pieces

3. Ginger cut into matchsticks

4. Red chilli cut into pieces

5. Salted vegetables cut into pieces

6. Green onion cut into pieces

7. Coriander cut into pieces

8. Cut 2 slits on each side of promfet

9. Rub some salt over fish to reduce fishy smell

10. Left it for 5 mins and rinse it off with water

11. Lay the base of the plate with ginger, mushroom, green onions, salted vegetables, tomato

12. Stuff pomfret with mushrooms

13. Rub salted plum over the fish

14. Lay ginger, mushroom, green onions, salted vegetables, tomato

15. Rice wine 1 tbsp, soy sauce 1 tbsp

16. Steam for 8-10 mins

17. Garnish with green onion, coriander and red chillies

==材料==

白鲳鱼

青葱

干蘑菇

咸菜 150克

番茄 咸水梅 2 粒

米酒 1 汤匙

生抽 1 汤匙

芫荽

小辣椒



==步骤==

1. 把香菇浸泡30分钟

2. 把香菇根去掉再切片

3. 姜切成丝

4. 红辣椒切片

5. 咸菜切片

6. 青葱切丝

7. 芫荽切段

8. 切2个切口在鱼身上

9. 涂上一层盐去鱼腥味

10. 放置5分钟,用水清走盐

11. 在盘上铺上一层姜,香菇,青葱,咸菜,番茄

12. 把香菇塞在白鲳鱼里

13. 咸水梅涂在鱼上

14. 铺上一层姜,香菇,青葱,咸菜,番茄

15. 米酒 1 汤匙 , 生抽 1 汤匙

16. 蒸 8-10 分钟

17. 洒上青葱, 芫荽和小辣椒
