Stir-Fry Egg White with crab is one of the popular Shanghainese dishes. It is a dish which egg fried with crab flavour.
== INGREDIENTS ==
Chicken Stock 1/2 tsp
Sugar 1/4 tsp
Chinkiang Vinegar 1/2 tbsp
Fresh Milk 2 tbsp
Snow Crab 5 pcs
Eggs 5 pcs
Broccoli 1 pc
== STEPS ==
1. Cut the broccoli into pieces.
2. Make the snow crab into pieces.
3. Separates the egg white and egg yolk. We need all the egg white and 1 egg yolk only.
4. Have a pot of boiling water. Cook the broccoli for 2 mins then arrange into the plate.
5. Mix all the seasoning and fresh milk into egg white. Stir it.
6. Hot oil, turn into low heat. Pour snow crab to fry it for a while.
7. Pour the egg white and fry with the snow crab for 30 seconds.
8. Afer 30 seconds, we're done.
9. Add egg yolk at the center.
10. Add Chinkiang Vinegar when serving.

芙蓉赛螃蟹是一道传统特色名菜,口感滑嫩,营养丰富,味似蟹肉,老少皆宜。以蟹肉为主料,配以鸡蛋,加入各种调味料,炒制成的菜肴。
==材料==
鸡精粉 1/2 茶匙
糖 1/4 茶匙
镇江香醋 1/2 汤匙
鲜奶 2 汤匙
鸡蛋 5粒
蟹柳 5片
西兰花 1颗
==步骤==
1. 把西兰花切片
2. 把蟹柳撕丝
3. 把蛋黄蛋白分开,我们只需要蛋白和一个蛋黄而已
4. 水煮沸,下西兰花煮2分钟,然后把西兰花摆在盘上
5. 把鸡精粉和糖倒入蛋白中搅拌,再加入鲜奶搅拌
6. 烧热油,开小火,蟹柳倒下去翻炒一下子,蛋浆倒下去炒30秒
7. 30秒后,拿出来放在盘上
8. 把蛋黄放在蛋白中间
9. 拌镇江香醋
