Sweet potato balls are a popular bite-sized snack in Taiwan. They are crispy on the outside and chewy on the inside. Made with tapioca flour, the texture on the inside is bouncy, very similar to that of tapioca pearls in bubble tea.
== INGREDIENTS ==
Sweet Potatoes 270g
Tapioca Starch 120g
Sugar 65g
== STEPS ==
1. Wash the sweet potatoes.
2. Peel off the skin of sweet potatoes.
3. Cut into smaller slices.
4. High heat steam for 15 mins.
5. Add sugar into steamed sweet potatoes.
6. Press evenly.
7. Add in tapioca starch.
8. Mix well.
9. Add water if too dry
10. Add tapioca starch if too wet.
11. Knead into dough.
12. Seperate out some of the dough.
13. Knead the dough into long strip.
14. Cut into cubes.
15. Knead the dough until it turns into smooth balls.
16. Pre-heat the cooking oil at medium heat.
17. Low heat fry until they're floated.
18. Press them lightly until they get larger.
19. It's ready when it turns brown.

==材料==
地瓜 270克
木薯粉 120克
糖 65克
==步骤==
1. 把地瓜清洗干净
2. 把皮削掉
3. 把地瓜切小片
4. 大火蒸15分钟
5. 把糖加入蒸熟的地瓜
6. 压制均匀
7. 加入木薯粉
8. 搅拌均匀
9. 太干可以加水
10. 太湿可以加木薯粉
11. 用手搓至团
12. 分出少部分
13. 搓至长条
14. 切块
15. 搓至圆球
16. 中火热油
17. 小火炸至浮起来
18. 反复轻压至膨胀
19. 捞起
