Chinese steamed eggs or water egg is a traditional Chinese dish found all over China. Eggs are beaten to a consistency similar to that used for an omelette and then steamed. It is sometimes referred to as egg custard on menus. If eaten cold, it has a taste and texture of a gelatin without sugar. I've been tweaking my grandma's recipe for a soooo long to get the absolute perfect silky texture and savory flavor so very excited to share with you guys. It can also be enjoyed with soy sauce. The taste is usually savory (as opposed to a sweet custard).
== INGREDIENTS ==
Eggs 4 pcs
Green Onion
Salt 1/8 tbsp
Chicken Stock 1/2 tbsp
Oil 1/2 tbsp
Pepper
Warm Water 2 cups
== STEPS ==
1. Cut green onions into pieces
2. Breaks 4 eggs into a bowl
3. Add 1/8 tbsp salt
4. Add 1/2 tbsp chicken stock
5. Add 1/2 tbsp oil
6. Add pepper
7. Add in 1/2 cup warm water
8. Whisk the eggs throughly
9. Make sure the eggs white and egg yolks are combined well together
10. Add in 1 1/2 cup of warm water
11. Gradually and continue beating
12. Transfer mixture through a sieve to a plate
13. Use spoon to get rid of bubbles on top
14. Cover the top with plastic wrap
15. Steam for 10 mins under low heat
16. Turn off heat and sit for another 5 mins
17. Take off the plastic wrap
18. Put some green onions on top
19. It’s ready

==材料==
鸡蛋 4 颗
青葱
盐 1/8 汤匙
鸡精粉 1/2 汤匙
油 1/2 汤匙
胡椒粉 适量
温水 2 杯
==步骤==
1. 青葱切段
2. 把4粒蛋敲进1个碗里
3. 加 1/8汤匙盐
4. 加 1/2汤匙鸡精粉
5. 加入 1/2汤匙油
6. 加入适量胡椒粉
7. 加入 半杯温水
8. 搅拌均匀
9. 确保蛋白蛋黄搅拌均匀
10. 加入1杯半的温水
11. 持续搅拌均匀
12. 用过滤网把蛋液倒入盘中
13. 用汤匙把蛋液上的泡沫拿掉
14. 用保鲜膜把蛋液盖上
15. 小火蒸10分钟
16. 把火关掉,然后再放5分钟
17. 把保鲜膜拿掉
18. 撒上青葱
19. 上菜啦
